- Peel the sweet potatoes
- Cut into pieces
- Boil till just soft for approx. 15 minutes
- Roughly chop the rocket
- Chop the sundried tomatoes fine
- Drain the sweet potatoes and mash them
- Drain the sweet potatoes and mash them
- Add the sundried tomatoes, rocket and Echte Boter
- Add salt and pepper to taste
- Mix the ingredients well
- Serve
