Summer mash

Ingredients

Summer mash
  • 1 kilo sweet potatoes
  • 200 grams sun-dried tomatoes in oil
  • 100 grams rocket
  • 60 grams unsalted Echte Boter
  • salt
  • pepper

Serves 4

Method

  1. Peel the sweet potatoes 
  2. Cut into pieces 
  3. Boil till just soft for approx. 15 minutes 
  4. Roughly chop the rocket 
  5. Chop the sundried tomatoes fine 
  6. Drain the sweet potatoes and mash them 
  7. Drain the sweet potatoes and mash them 
  8. Add the sundried tomatoes, rocket and Echte Boter
  9. Add salt and pepper to taste 
  10. Mix well 
  11. Serve
