Tip: For the best result make the dough the day before and allow to rest overnight in the fridge!
- Make sure the Echte Boter is at room temperature.
- Mix the Echte Boter, salt and caster sugar together by hand or mixer.
- Mix in the buttermilk.
- Sift the flour, baking soda and the speculaas spice.
- Add the flour, baking soda and speculaas spice to the butter mixture.
- Knead the mixture into a smooth dough.
- Let the dough rest in the fridge overnight for the best result.
- Shape the dough into the desired speculaas form (with a biscuit cutter or mould) or 1 large piece.
- Bake it gently in the oven at 170/180 degrees. The baking time depends on the thickness/size of the dough: approx. 10 minutes for biscuits and 35/40 minutes for a speculaas figure.
- If the biscuits spring back when you touch them gently they are ready.
- When ready remove from the oven and allow the speculaas to cool.
- Serve with hot chocolate & whipped cream… delicious!
