Ingredients

Really Delicious Speculaas!
  • 250 grams Echte Boter
  • 250 grams white or brown caster sugar caster
  • 5 grams salt
  • 50 grams buttermilk
  • 400 grams Zeeuwse flour (pastry flour or ‘00’)
  • 100 gram Patentbloem (all-purpose flour)
  • 4 gram baking soda
  • 25 gram Speculaas spices

Method

Tip: For the best result make the dough the day before and allow to rest overnight in the fridge!

  1. Make sure the Echte Boter is at room temperature.
  2. Mix the Echte Boter, salt and caster sugar together by hand or mixer.
  3. Mix in the buttermilk.
  4. Sift the flour, baking soda and the speculaas spice.
  5. Add the flour, baking soda and speculaas spice to the butter mixture.
  6. Knead the mixture into a smooth dough.
  7. Let the dough rest in the fridge overnight for the best result.
  8. Shape the dough into the desired speculaas form (with a biscuit cutter or mould) or 1 large piece.
  9. Bake it gently in the oven at 170/180 degrees. The baking time depends on the thickness/size of the dough: approx. 10 minutes for biscuits and 35/40 minutes for a speculaas figure.
  10. If the biscuits spring back when you touch them gently they are ready.
  11. When ready remove from the oven and allow the speculaas to cool.
  12. Serve with hot chocolate & whipped cream… delicious!
