Real Christmas biscuits

Real Kerstkransjes – Christmas biscuits


  • 175 grams Echte Boter plus extra butter to grease the cutter
  • 100 grams white caster sugar
  • 250 grams Zeeuwse flour (pastry flour or ‘00’)
  • Pinch salt
  • 1 tsp lemon zest
  • 20 grams milk
  • 1 tsp baking soda
  • Wreath biscuit cutter (5 ½ cm diameter) or other Christmas shape
To finish:
  • 75 grams flaked almonds
  • 50 grams sugar
  • 1 beaten egg


  1. Preheat the oven to 170 degrees.
  2. Make sure the Echte Boter is at room temperature.
  3. Mix the butter, caster sugar, salt, lemon zest, milk, baking soda and flour together and knead it into a shortcrust / biscuit dough.
  4. Roll out the dough to about 3mm thickness.
  5. Cut out the dough with a special wreath-shaped cutter or other Christmas biscuit shape.
  6. Place the slices on baking paper.
  7. Brush well with the beaten egg.
  8. Sprinkle with the flaked almond and sugar.
  9. Bake in the preheated oven at 170 degrees for about 10-12 minutes.
  10. Remove the biscuits from the oven and let them cool.
