Whipped garlic butter
- Preheat the oven to 200 degrees. Cut the top off the garlic bulb, place in aluminium foil and sprinkle with olive oil. Close the foil and bake for 45 minutes until the garlic is soft.
- Place the ice cubes in a bowl. Place a second bowl over the ice and pour in the melted butter. Beat with a whisk or hand mixer until the butter is light yellow in colour and starting to fluff up.
- Squeeze the garlic cloves out of their skin, and add to the butter together with the parsley and salt. Continue beating until the butter is very fluffy.
Whipped butter with honey
- Place the ice cubes in a bowl. Place a second bowl over the ice and pour in the melted butter. Beat with a whisk or hand mixer until the butter is light yellow in colour and starting to fluff up.
- Add the honey and continue beating until the butter is very fluffy. Serve the butter with extra honey poured over it.
Whipped brown butter
- Heat the butter in a saucepan. At first it will start to foam and then change colour to light brown with dark speckles. At this point leave the butter cool to room temperature.
- Place the ice cubes in a bowl. Place a second bowl over the ice and pour in the melted butter. Beat with a whisk or hand mixer until the butter is fluffy.
Tip: delicious with roasted garlic and sea salt.
