Egg muffins with Echte Cheese Spread protein 15+

Meal prep these egg muffins made with Echte Cheese Spread Protein 15+ & eggs, and finish with leftover vegetables from the fridge!

Ingredients

  • 10 eggs
  • 100 gram Echte Cheesespread protein 15+
  • 1 tomato, diced
  • 1 red pepper, diced
  • ¼ head of broccoli, diced
  • 2 spring onion stalks, cut into rings

makes 12 muffins

Preparation time 40 minutes

Method

  1. Preheat the oven to 180 degrees.
  2. Beat 2 eggs with the cheese spread until smooth. Add the rest of the eggs, season with salt and pepper, and beat again.
  3. Divide this egg mixture into a greased muffin tins. Add the vegetables equally over the muffins and bake in the oven for 25 minutes.

Tip: Alternatively add in any leftover vegetables from the fridge!
