Real_Butter_apple pie_with_apricots

Ingredients

Pastry ingredients:
  • 100 grams soft white caster sugar
  • 200 grams unsalted Echte Boter
  • Half an egg
  • Pinch of salt
  • 300 grams Zeeuwse flour (pastry flour or ‘00’)
Pie ingredients:
  • 4 cooking apples (e.g. goudreinetten)
  • 6 dried apricots
  • Ground cinnamon - pinch
  • Caster sugar – to taste
  • Half an egg
  • Apricot jam

Recipe for 1 pie

Method

Method - dough::

  1. Beat the caster sugar, egg, butter and salt
  2. Add the pastry flour and mix
  3. Wrap the dough in clingfilm and let it rest in the fridge for at least 1 hour


Method - filling:

  1. Soak the apricots in water
  2. Peel the apples
  3. Quarter and core the apples
  4. Slice the quarters thinly
  5. Place the apple in a bowl, add a little cinnamon and sugar
  6. Mix to combine
  7. Chop the apricots finely and add to the apple mixture
  8. Preheat the oven to 160 degrees
  9. Remove the chilled dough from the refrigerator and cut slices from it to fill the pie form (do not roll the pastry)
  10. Press the slices of dough into the form, ensuring the base and sides are covered
  11. Layer the apple carefully in the pastry case
  12. Roll the remaining dough into a thin strip so that you can cut slices for the top of the pie
  13. First place a strip of pastry around the outer edge of the pastry case
  14. Then use the remaining strips to form a lattice over the top of the pie
  15. Beat the egg
  16. Brush the lattice and edge with it
  17. Place the pie in the preheated oven for about 60 minutes
  18. Heat a little apricot jam with a little water in a pan
  19. As soon as the cake comes out of the oven, pour the warmed jam over the top to glaze the pie
  20. Serve with a spoonful of whipped cream!
