- Mix the wheat flour, buckwheat flour, baking powder, and a pinch of salt. Stir in the milk. Add the eggs and mix until smooth.
- Heat some butter in a frying pan. Spoon small amounts of batter into the pan, about half a tablespoon per blini. Cook until bubbles form on the surface, then flip. Repeat until all the batter is used.
- Top the blinis with Echte Smeerkaas 20+, smoked salmon, and microgreens. For a vegetarian option, use avocado slices and sprouts.
