Method - dough:<\/strong>:<\/p>\n

  1. Beat the caster sugar, egg, butter and salt<\/li>\n
  2. Add the pastry flour and mix<\/li>\n
  3. Wrap the dough in clingfilm and let it rest in the fridge for at least 1 hour<\/li>\n<\/ol>\n


    \nMethod - filling:<\/strong>:<\/p>\n

    1. Soak the apricots in water<\/li>\n
    2. Peel the apples<\/li>\n
    3. Quarter and core the apples<\/li>\n
    4. Slice the quarters thinly<\/li>\n
    5. Place the apple in a bowl, add a little cinnamon and sugar<\/li>\n
    6. Mix to combine<\/li>\n
    7. Chop the apricots finely and add to the apple mixture<\/li>\n
    8. Preheat the oven to 160 degrees<\/li>\n
    9. Remove the chilled dough from the refrigerator and cut slices from it to fill the pie form (do not roll the pastry)<\/li>\n
    10. Press the slices of dough into the form, ensuring the base and sides are covered<\/li>\n
    11. Layer the apple carefully in the pastry case<\/li>\n
    12. Roll the remaining dough into a thin strip so that you can cut slices for the top of the pie<\/li>\n
    13. First place a strip of pastry around the outer edge of the pastry case<\/li>\n
    14. Then use the remaining strips to form a lattice over the top of the pie<\/li>\n
    15. Beat the egg<\/li>\n
    16. Brush the lattice and edge with it<\/li>\n
    17. Place the pie in the preheated oven for about 60 minutes<\/li>\n
    18. Heat a little apricot jam with a little water in a pan<\/li>\n
    19. As soon as the cake comes out of the oven, pour the warmed jam over the top to glaze the pie<\/li>\n
